Do you like adobo? Do you like eggplant? Well if you do, then you are going to love this lunch or dinner recipe! I’ve made this recipe of mine a couple of times and it never failed to put a smile on my family’s faces or to anyone who has ever tried it. I promise you this is so delicious and super easy to make. 



How to make Adobong Carne Con Talong


When creating this recipe, I wanted it to be easy so that anyone, even with just a little bit of cooking experience, can cook this and surprise people with the goodness of this dish. 


Marinate the pork

Traditionally, when cooking a classic adobo, I saute the garlic first and then add the pork followed by the other ingredients. But, to make it easy, I marinate the pork first in a bowl with the soy sauce, vinegar, sugar, pepper, and garlic. I let it marinate for a few minutes but it can also be used right away!


Cook the marinated pork all at once

It’s that simple, just turn on the heat and cook the pork all at once.


Let the pork simmer for about 15 minutes

Before covering and letting it simmer, add the water, pork cube and bay leaf. Originally, I added 1 cup of water and waited until the liquid had been reduced to ½. But, it can take more than 15 minutes. So for this recipe, I adjusted it to ¾ cup of water only and 15 minutes will be enough. But if you find that the taste is too strong, just add a little bit of water. 


Add the eggplant

Add the eggplants and cover it again and let it cook for another 3 minutes. Don’t let the eggplant cook for too long or it will be too tender and soft. 


Add the cornstarch slurry

Add the cornstarch slurry so the sauce will become thick. 


Add the bell peppers and and sesame seeds

Adding bell peppers is an important step because not only does the bell pepper give this dish a beautiful combination of colors but it adds a certain kind of flavor which makes this dish a 100%. I add this at the very end because I want the bell peppers to still have that crisp texture. Adding sesame seeds makes this dish very appealing so if you have friends over for lunch or dinner, they’ll surely be wanting to try it!




Adobong Carne Con Talong


Prep Time: 10 minutes

Cooking time: 20 minutes

Total Time: 30 minutes

Additional 30 minutes or more if marinating time is included


  • 500g pork, thinly sliced 

  • 3 cloves of garlic

  • ¼ cup soy sauce

  • ⅓ cup cane vinegar

  • 4 tbsp sugar

  • ¼ tsp ground black pepper

  • ½ pork cube

  • ¾ cup water, add more if needed

  • 3-4 eggplant, thinly sliced

  • 2 red bell peppers

  • 3 tbsp cornstarch+3 tbsp water

  • 1 tbsp sesame seeds, plus for garnishing



Instructions:

  1. In a bowl, add the pork that has been sliced thinly, about 2-3 inches long and ¼-½ inch thick. Add the soy sauce, vinegar, garlic, and sugar. Massage the pork with the marinade. Let this sit covered for at least 30 minutes but you can use it right away.

  2. After marinating, heat a large saucepan or a wok and place the marinated pork. Add the water, pork cube and the bay leaf. Stir a few minutes to let the pork cube dissolve. Cover and cook for about 15 minutes. 

  3. Once the liquid has reduced to ½, add the eggplant and let it cook for about 3 minutes. Add the bell pepper last.

  4. Serve by garnishing sesame seeds on top.
