Recipe for Tebasaki Chicken Wings ( Sweet Soy Chicken)
Ingredients
For the marination:
- 1kg Chicken wings
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp garlic powder
For the Sweet Soy Glaze
- 2/3 cup soy sauce
- 1/3 cup mirin
- 1/3 cup sugar
- 1/3 cup sake or rice wine
- 2 cloves minced garlic
- 3 tbsp cornstarch
- 3 tbsp water
Others
- 1 cup cornstarch (for coating)
- Oil for frying
- Toasted Sesame seeds for garnish
Instructions:
- Prepare your chicken wings by slicing them in half. Marinate with salt, pepper, and garlic powder. Mix until well incorporated. Let it marinate for at least 30 mins. You can also marinate this for more than 1 hour or 24 hours in the fridge.
- To fry, coat the chicken with cornstarch. Drop the chicken wings in the hot oil and fry for 12 minutes. You can fry them 6 minutes on each side in medium heat. Take out the chicken and let it rest for a while.
- Double Fry. Drop the chicken wings once more in the hot oil and fry in medium high heat until golden brown. Double frying will ensure a crispier chicken.
- Make the sauce. In a pan, pour the soy sauce, mirin, sake or rice wine, sugar, and minced garlic. Stir the sauce until sugar has completely dissolved. Finally, combine cornstarch and water to make a slurry then add the mixture in the sauce. Stir until the sauce starts to thicken and coats the back of a spoon.
- In a big bowl, place the fried chicken wings. Pour enough sauce slowly on the chicken then toss the bowl to mix until the chicken wings are fully coated with the sauce.
- Serve on a plate and garnish with some toasted sesame seeds and voila you are done and ready to eat!
