Spicy Stir Fried Eggplant
Talong (eggplant) has always been my favorite vegetable. I was thrilled to have found this recipe on the internet though I have made some changes to make this recipe much easier. So whenever you are feeling of eating something spicy and a little bit sweet, this is for you.
Ingredients:
- 3-4 eggplants
- 1/2 tbsp salt
- 150g ground pork or chicken
- 1 tbsp ginger, chopped
- 4 cloves garlic, chopped
- 3 tbsp sugar
- 2 tbsp soy sauce
- 2 tbsp vinegar, white or cane
- Salt and pepper to taste
- Chili peppers
Instructions:
- Slice the eggplants in roll cuts. After every slice, roll the eggplant before slicing the same direction. Place into a bowl then add the salt. Massage the eggplant with the salt until moisture comes out. Extract moisture from the vegetable by squeezing with your hands. Add cornstarch and mix until fully coated.
- For the sauce: In a separate bowl, add the chopped ginger and garlic, sugar, soy sauce, vinegar, water, and chili peppers then mix. Set aside.
- In a non stick pan, add the eggplant. If your pan is not non-stick, drizzle some oil. Cook the eggplants until slightly brown.
- Remove from pan, then add the ground pork or chicken. Cook until it starts to brown or caramelize.
- Add the cooked eggplant and pour in the sauce. Mix and let it simmer for a while.
- Serve hot on a plate.
