Recipe for Ube Cheesecake bars
Ingredients:
• 1/2 cup unsalted butter, melted
• 3/4 cup sugar
• 2 eggs
• 1/4 cup ube halaya
• 1 tbsp ube extract
• 1 1/4 cup all purpose flour
• 1 tsp baking powder
• 1/2 tsp salt
• 8 oz cream cheese
• 1/4 cup sugar
• 1 large egg
• 1 tsp of Vanilla Extract
Instructions:
1. In a bowl, cream together melted butter and sugar. Then, add the ube halaya and vanilla extract. After mixing, add the eggs. Whisk until well incorporated.
2. Using a sifter, sift the flour and baking powder together. Then, add the salt. Fold in the dry ingredients into the wet mixture gently. Do not over-mix.
3. Get 1/4 cup from the batter and you can add a little water to it to make it a bit runny so you can use it for later. For the remaining batter, pour it to your prepared 8x8 square inch pan lined with parchment paper and set aside.
4. In another bowl, add the softened cream cheese. Using a spatula or a mixer, soften the cream cheese until it looks creamy in texture. Then, add the sugar and mix again. Once well incorporated, add the egg and vanilla extract then give it a final mix.
5. Pour the cheesecake batter on top of the ube batter evenly. Then, add the remaining 1/4 cup of ube batter on top of the cheesecake batter distributing it wherever or however you like. With a toothpick, start making swirls all around the batter.
6. Bake the cheesecake bars at 350F or 180C for 30 minutes. After baking, let cool completely before serving.
