Easy Okonomiyaki
Whenever I think about eating just vegetables, I straight away think of Okonomiyaki. I have never made it the most authentic way, since I can’t find a Japanese yam called Nagaimo where I am from, but I did manage to make an easier version. Besides, “Okonomiyaki” means anything you like anyway.
Recipe for Okonomiyaki
Ingredients:
- 1 cup flour
- 2 eggs
- 2 tbsp cornsatrch
- 1/2 cup water
- 1 tsp dashi powder
- 1/4 tsp salt
- Cabbage 3 cups
- Carrots 1 cup
- Green onions 1 cup
Okonomiyaki Sauce:
- 2 tbsp ketchup
- 2 tbsp worcestershire sauce
- 2 tsp honey
- 1 tsp soy sauce
Instructions:
- Prepare vegetables by chopping them into small chunks. Set them aside.
- Prepare the batter. Sift flour and cornstarch together, then add the eggs. Dissolve the dashi powder in the water first then add it to the batter. Add in salt as well. Whisk the batter until smooth.
- Add the vegetables into the batter and mix until all the vegetables have been coated.
- In a pan, drizzle some oil. Place about 1 cup of the okonomiyaki mix on the heated pan. Flatten it down a bit forming a circle. Cover with lid and cook for about 3-4 minutes or until it starts to brown on the bottom. Then flip and repeat. Once cooked, place it on a plate.
- For the sauce, combine all the ingredients together then mix.
- To assemble, spread some of the sauce on top of each okonomiyaki. Then, drizzle with some kewpie and enjoy! (You can also add some bonito flakes to make it look more fancy)
