Tortang Talong






I love eggplant and this dish is the reason why I fell in love with this vegetable. You can simply just cook it with egg and salt and pepper, we all know it is still delicious. But, I like to add minced onion, bell peppers, and tomatoes. It just makes it better! 

Recipe for tortang talong

Ingredients:
  • 4-5 medium sized eggplants
  • 1 tomato, minced
  • 1 red onion, minced
  • 1 red bell pepper, minced
  • 2 eggs
  • Salt and pepper to taste
  • 1 tsp garlic powder, optional


Instructions:

  1. Char the eggplants by burning the outer part using a griller. You can also just airfry it. Make sure to poke the eggplant first with a knife. Airfry it for around 15-20 minutes.
  2. Place the eggplants in a container covering with foil and let it cool down. Once cooled, peel the eggplant.
  3. In a separate bowl, combine the eggs, tomato, onion, and bell peppers. Whisk until eggs have scrambled. Add salt and pepper to taste. 
  4. Add the eggplant into the egg mixture and press the eggplant with a fork making sure it the egg mixture coats the eggplant. Then, directly add it to the heated oil to fry. Add some of the minced spices on top of the torta. Let it fry for a few minutes and flip once it turns brown. 
  5. Serve on a plate with your favorite sauce.
