Pork Binagoongan
This recipe just recently became my favorite. If you haven’t tried this as well then you definitely should!
Recipe for Pork Binagoongan
Ingredients:
- 500-700g of pork belly, sliced about 2 inches wide
- 1 tomato, diced
- 1 onion, diced
- 2 tbsp bagoong (shrimp paste)
- 2 tsp sugar
- 2 tbsp vinegar
- 1/2 tsp black pepper
- 1 pork cube
- Water
- 3-4 eggplants, sliced about 2 -3 inches long
Instructions:
- Sauté tomato and onions. Then, add the pork and pork cube. Stir until pork cube has dissolved.
- Let the pork sear until a lot of of its fat has come out. Then, add the sugar, bagoong, and vinegar. Stir until well incorporated.
- Add some water to let the pork boil until it’s tender and water has reduced. Keep adding water if water has reduced but the pork is not yet tender.
- In a separate pan, deep fry the eggplants. Place on a paper towel once cooked.
- When the pork is already tender, turn off the heat. Assemble by placing the fried eggplants together with the pork binagoongan on a plate. Enjoy!
