Fried Chicken Ala King
In the Philippines, Chicken Ala King is a popular dish. It’s mainly chicken with cream sauce. It’s great as a filling for a pies. But, I like this version of fried chicken with the ala king sauce with a little bit of cheese. I’m sure most of Filipinos know the Ala King Rice bowl from KFC. This is my kind of version of it.
Recipe:
Ingredients:
- 1/2 kg chicken thigh, boneless
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 3 cloves of garlic minced or 2 tsp of garlic powder
Breading
- 1/2 cup all purpose flour
- 1/2 cup cornstarch
- 1 tsp paprika
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp pepper
- Water
Ala king Sauce
- 1/4 cup chopped carrots
- 1/4 cup chopped mushrooms
- 1/4 cup chopped red onion
- 2 cloves of chopped garlic
- 2 tbsps butter
- 4 tbsps flour
- 1 cup chicken broth
- 1 cup milk
- 1/2 cup cheese
Instructions:
- Prepare the chicken by marinating it with salt, pepper, paprika, and garlic. Cover and let it marinate for at least an hour.
- Fry in hot oil for about 8-10 minutes until each side is golden brown. After frying, place on paper towels to remove excess oil.
- Prepare the ala king sauce. In a sauce pan, melt the butter on medium heat. Sauté onion, carrots, mushrooms, and garlic for a few minutes. Add flour then stir until the mixture comes together. Slowly add chicken stock. Stir until it starts to form a thick sauce. Finally, add the milk and cheese. Keep stirring the sauce until the cheese melts. Take off the heat once done.
- To serve, place chicken on a plate and pour the ala king sauce on top of the chicken. Garnish with sliced green onions.
