Banana Bread with Walnuts



I know I already have a banana bread recipe that I shared here in my blog a few years ago, but this has been my recent banana bread recipe favorite because it’s easier! The secret is to use very ripe bananas to get that deep flavor and moist texture!  




Recipe

Ingredients

  • 3 very riped bananas (245g)
  • 1/2 cup Vegetable oil (113ml)
  • 3/4 cup brown sugar (150g)
  • 2 large eggs
  • 1 1/2 cups all purpose flour (187g)
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Walnuts 50g or around 1/2 cup chopped
  • Chocolate chunks for topping


Instructions:

  1. Preheat oven at 350F or 180C. Prepare loaf pan (9x5x3) by greasing with butter and flour or a parchment paper. You can use a smaller loaf pan for a taller banana bread. 
  2. Prepare the bananas by mashing them with a fork. Chop walnuts. Set these aside.
  3. In a mixing bowl, combine vegetable oil, sugar, eggs, and vanilla extract. With a mixer on medium high, beat until fully incorporated. Add the mashed bananas and chopped walnuts.
  4. Sift together the flour, baking soda, and cinnamon. Then, sprinkle in the salt. Add the dry mixture into the wet mixture and fold it in gently until there are no more lumps. 
  5. Pour into the prepared pan and top with some chocolate chunks if desired. Bake for 55-60 minutes.
  6. Let it cool down completely after baking before serving.
