Maja Ube

 

Maja Ube 




This is a very special dessert for me because I remember tasting this for the first time back when I was in college. I got so addicted to it after one bite! I am not a fan of maja blanca but this I am very much am! 





Recipe

Ingredients:


  • 1 1/4 cups cornstarch
  • 2 cups of water
  • 1 can of Coconut Milk
  • 1 can of evaporated milk
  • 1 can of Ube Condensada
  • 1 cup of kernel Corn
  • Grated Cheese for topping


Instructions:

  1. In a large saucepan, add the cornstarch and water together. Mix until cornstarch has dissolved. Add the coconut milk, evaporated milk, and ube condesada. Mix with a whisk until the well incorporated and it has turned purple. 
  2. Turn on the heat on medium high. Keep stirring while it cooks so that nothing burns on the bottom. Make sure to scrape the sides every once in a while. 
  3. Run a rubber spatula in the middle and when the mixture divides or you can see the bottom of the pan, it’s done. You can add the kernel corn and fold it in the mixture.
  4. Grease a 9x13 pan with butter. Then, pour the maja ube into the pan. Add some grated cheese on top. Let it cool down completely before placing it in the fridge. 
  5. Once cold, it is ready to serve.
