The Best Ever S’mores Brownies


S’mores Brownies




These s’mores brownies gave me the exact feeling when I had my first ever actual s’mores! The brownie just has that rich chocolate flavor that is sandwiched between the graham crust and toasted marshmallow topping. You will surely impress your family and friends with this one! 

Recipe: 
For the crust
- 200g crushed graham crackers
- 6 tbsp melted butter

Brownie batter
- 200g or 1 cup white sugar
- 50g or 1/4 cup brown sugar
- 3 eggs
- 1 tsp salt
- 1 tsp vanilla extract 
- 112g dark chocolate
- 45g cocoa powder, divided (25 for melting, 20 for sifting)
- 1/2 tbsp coffee powder 
- 141g of butter
- 64g or 1/2 cup flour

- graham crackers for topping
- chocolate chips or chunks for topping

Instructions:
1. Grease and line an 8x8 inch baking pan. Pre-heat oven to 350F or 180C. In a bowl, mix together the crushed graham crackers and melted butter. Mix with a fork until it looks like wet sand. Place it on the pan and press gently to form the crust. 
2. In a bowl, add chocolate, half of the cocoa powder, and coffee powder or espresso powder. Melt butter in a saucepan until it simmers. Pour the hot melted butter into the bowl with the chocolate. With a spoon, mix until the chocolate has completely melted and set it aside. 
3. In a mixing bowl, add the sugars, salt, and eggs. With a kitchen mixer, beat the eggs and sugar together until it looks like a pancake batter. I mix mine for exactly 10 minutes. 
4. Pour the melted chocolate into the beaten sugar and egg and add the vanilla extract as well. Beat for another few minutes. Sift in the flour and remaining cocoa powder and fold it in gently until there are no more lumps. 
5. Pour the brownie batter on top of the crust in the prepared baking pan. Slam the pan on your counter to release air bubbles. Place in the oven and bake for 45-50 minutes or until toothpick comes out almost clean. 
6. Add marshmallows on top. You can add as much as you like. Then, place in the oven and broil it for about 2 minutes at 390F or 200C. It make take longer or might even be quicker for the marshmallow to toast so keep an eye on it. Once done, remove from the oven and let it cool. Add some more chocolate chips and graham crackers on top if desired. You can also eat this right away if you want a warm brownie.
